Located on the east bank of the Demerara River in Guyana, the Diamond Distillery, operated by Demerara Distillers Ltd., stands as a living testament to rum-making heritage and technical distinction. From its roots in Guyana’s sugar cane industry, the distillery uses Demerara molasses, derived from Guyanese sugarcane, which contributes a rich, fruity sweetness and underpins its flagship brand El Dorado.
What makes the Diamond Distillery truly exceptional is its collection of historic distillation equipment: wooden pot stills and even a wooden column (Coffey) still that are believed to be among the last of its kind in operation anywhere in the world. For example, the double wooden pot still originally from the Port Mourant estate, and the single wooden pot still from Versailles, now reside at Diamond. The wooden Coffey still (Enmore) is reported to be the only operational wooden continuous column still of its kind globally.
These different stills allow for a remarkable range of rum styles, from heavy, ester-rich distillates to lighter column-spirits, providing the blending team tremendous flexibility in crafting El Dorado expressions (3, 5, 8, 12, 15, 21, 25 year olds, single still rums and limited editions).
Beyond its heritage equipment, Diamond Distillery is also committed to sustainability and innovation in production. A bio-methanisation plant, commissioned around 2010, converts liquid distilling waste into energy to power the site, while additional efforts include use of liquified natural gas (LNG) and a carbon-dioxide recovery system. These initiatives reflect a forward-looking approach—linking tradition with responsible practices while maintaining world-class rum production.
